El pollo a la brasa tiene su día en Perú

La celebración se centra en Lima, donde el consumo per cápita anual llega a 60 kilos

Desde 2010 y por decisión del
Ministerio de Agricultura del Perú, el tercer domingo de julio se conmemora el
Día del Pollo a la Brasa, como reconocimiento al que es considerado uno de los
productos gastronómicos más consumidos por los peruanos. Incluso el Instituto
Nacional de Cultura del Perú (INC), mediante resolución, reconoció al pollo a
la brasa
 como “Patrimonio Cultural de la Nación”, siendo catalogado como el
tercer plato más representativo de la cocina peruana, después del ceviche y la
pachamanca.

De acuerdo con un estudio de la
Facultad de Marketing de la Universidad San Ignacio de Loyola (Usil), publicado
por el diario Gestión, “si bien desde 2004 el pollo a la brasa es reconocido
como una especialidad culinaria por el INC, desde hace más de seis décadas es
un símbolo de la identidad peruana. La receta original contenía un aderezo
producto de la mezcla de ají panca, sillao, huacatay, sal y pimienta. En la
actualidad, cada restaurante le añade un ingrediente especial y se adapta al
gusto y a la demanda de los consumidores”.

En la capital peruana
esta celebración tiene gran arraigo y es acogida por las principales cadenas de
restaurantes especializadas en esta delicia gastronómica, como Rocky’s,
Norky’s, Pardo’s Chicken o Don Belisario, que preparan en sus establecimientos
promociones especiales para esta fecha (en 2014 cae el 20 de julio). Según el
mismo estudio de la Usil, la frecuencia de consumo
de pollo a la brasa en el 72 por ciento de los hogares limeños entrevistados es
de 1 a 2 veces al mes. El 40 por ciento de los consultados afirmó, con alta
probabilidad, que celebrará el Día del Pollo a la Brasa comiendo este plato; el
32 por ciento se encuentra indeciso y el 28 por ciento no lo celebrará.
