Pollos orgánicos, ¿humanos orgánicos?

Recientemente,
tuve la oportunidad de asistir al World Nutrition Forum organizado por Biomin,
en Múnich, Alemania. En este magnífico evento, hubo varios conferencistas que
desafiaron a los asistentes con temas que nos parecerían contrarios a las
tendencias mundiales, o a lo que queremos y nos gusta oír. Por ejemplo, durante
la mesa redonda de la sesión de avicultura, en la que todos los ponentes reunidos
analizaron los temas presentados, uno de ellos habló sobre cómo hay conceptos
que a veces pegan con fuerza en la sociedad y hace que el consumidor se quede
atorado en ellos.

Unos de
estos conceptos es la producción de alimentos orgánicos. El público que está a
favor de estos productos y está dispuesto a pagar una prima extra, puede a
veces, llegar a extremos. Pero, retrocedo un paso: siempre he pensado que en
Latinoamérica, la mayoría de la población no está aún en condiciones de acceder
a este tipo de productos, simplemente por precio. Y no es para menos, si hay
muchos millones que todavía viven en la pobreza y muchos otros que apenas están
dejando esas filas para pasar a las de la clase media.

La idea
de los alimentos orgánicos no es mala. Creo que, por ejemplo, la conciencia que
se ha despertado en torno a los antibióticos promotores del crecimiento al
final va a rendir buenos resultados, ya que reduciremos la resistencia a estos
productos, que se usarán sólo para remediar infecciones. Pero, volviendo al
tema y a los extremos, los antibióticos pueden llegar a ser necesarios en la
producción avícola. No obstante, el consumidor que respalda los pollos
orgánicos no quiere ningún antibiótico. Para ello, yo preguntaría, tal y como
hizo uno de los ponentes: “¿qué no usamos antibióticos los humanos cuando los
necesitamos? ¿Qué acaso queremos ser humanos orgánicos?”. No creo que nadie
quiera ser “orgánico” y morir en el intento.
