Casi lista norma técnica para ovoproductos colombianos

Si bien
desde la década de 1990 se producen en Colombia ovoproductos, el auge comercial
de estos alimentos llevó en 2014 al gremio avicultor nacional a encarar la
elaboración de una norma técnica respectiva, de la mando del Instituto
Colombiano de Normas Técnicas
(Icontec), la cual se publicará oficialmente
entre marzo y abril próximos, luego de ser revisada por el consejo técnico del
organismo consultor.

Así lo
reseñó el bisemanario Agronegocios, que aseguró en sus páginas lo siguiente:
“en la nueva norma se aclarará el concepto de
ovoproductos y sus características, se especificará su clasificación, se
describirán los requisitos físico-químicos y microbiológicos, las condiciones
de manipulación y rotulado y las buenas prácticas en su manufactura, dado que
la normatividad colombiana actual es muy general y aplica para toda la
industria de alimentos”.

A la par
con este desarrollo técnico, el presidente ejecutivo de la Federación Nacional
de Avicultores de Colombia (Fenavi), Andrés Valencia, explicó que “el gremio se encuentra trabajando en una investigación
donde se identificará las ganancias en productividad, la reducción de
desperdicios, la disminución en tiempos de operación y la optimización de la
dosificación a partir del uso de ovoproductos para la industria alimenticia”.

Los huevos líquidos y en polvo son utilizados
mayoritariamente por panaderías y fabricantes de pastas, entre otros alimentos
(para los cuales existen productos tan especializados como las claras con
azúcar), pero algunas firmas están incursionando en comercios detallistas de
grandes superficies para llegar al consumidor final con productos de alto valor
agregado y evidentes beneficios. Es el caso de las firmas Avinal, Santa Reyes,
Alcampo, Avícola Triple A y Ovopacific, que incluso ofrecen huevos en polvo con
sabor a tocineta y una vida útil de 24 meses. Esta última marca comercializa
desde 2013 su producto exclusivo Ovitas, fabricado con claras de huevo en forma
de lonchas o tajadas, similares al queso, con un elevado nivel de proteínas y bajas
en grasa.
