El incremento obtuvo casi el mismo índice en que cayó la ingesta de carne de res
Para el Instituto Nacional de Carnes de Uruguay (INAC), en 2013 cada habitante del país oriental se alimentó con 59.4 kilos de carne bovina (-0.6 por ciento con relación a 2012), 20.7 kilos de carne de pollo (+0.7 por ciento), 16.8 kilos de carne porcina (+2.8 por ciento) y 4.3 kilos de carne ovina (+0.3 por ciento).
“Este año hubo una pequeña caída del consumo de carne bovina por la baja de la faena que repercutió en la oferta en carnicerías y la escasez trajo suba de precios que estabilizó el consumo”, dijo Gabriel Costas, jefe de la Dirección de Control de Mercado Interno del INAC, citado por el diario montevideano El País.

El investigador agregó también que “la brecha de consumo de carne entre las familias de menor y mayor nivel socioeconómico de Montevideo tuvo una fuerte reducción en los últimos ocho años”. Según un estudio del INAC que dividió las familias de Montevideo entre las de nivel socioeconómico alto, medio y bajo, la brecha de consumo entre los dos extremos se redujo sustancialmente. En 2005 “era de 17 kilos de diferencia y hoy estamos en menos de 6 kilos y siempre tomando en cuenta que no bajaron el consumo”, dijo Costas.
Las familias de nivel socioeconómico más bajo consumían en 2005 42.1 kilos de carne (de todos los tipos) mientras que los de poder adquisitivo más alto consumían 60.2 kilos. En 2013 la ingesta de los primeros alcanzó a los 55.6 kilos mientras que para los de mayores ingresos llegó a los 62.2 kilos. Para Costas, estos resultados se dieron “porque se mantuvo el nivel de los salarios y los precios fueron estables”.
