Pese a un repunte en el precio en los últimos meses, la carne de pollo sigue siendo -y de lejos- la proteína animal más consumida en Bolivia, con 38 kilos anuales per cápita que superan los 20 kilos per cápita de carne de res. “Este repunte constante se explica en buena parte por el precio, que se ha mantenido estable, por la calidad de la oferta y por cambios en los hábitos de consumo”, afirmó Agustín Jiménez, presidente del Colegio de Economistas de Bolivia, citado por el diario El Deber.

En promedio, el kilo de carne de pollo en Bolivia se comercializa al detal en 14 bolivianos (un poco más de dos dólares). Las condiciones económicas de la población boliviana hacen que escoja con mayor asiduidad esta proteína animal sobre la carne de res, donde la nación del altiplano andino presenta uno de los consumos per cápita más bajos del continente, superado ampliamente por sus vecinos Argentina (70 kilos), Uruguay (63 kilos) y Brasil (35.5 kilos).

Ricardo Alandia, presidente de la Asociación Nacional de Avicultores (ANA), se mostró satisfecho por esta tendencia permanente, dado que el consumo hace 20 años era apenas de 10 kilos y en 2007 llegó a los 27 kilos per cápita. “Trabajamos para mantener estos volúmenes y la expectativa es lograr más cupos para la exportación”, recalcó el dirigente al mismo rotativo, agregando que el panorama es distinto para el huevo, pues su consumo apenas llega a 180 unidades per cápita anuales (aunque en 2003 era todavía más precario: 98 unidades). “Estamos gestionando un acuerdo con el gobierno central y los municipios para que incluyan el huevo en los desayunos escolares y así crecer otro 10 ó 15 por ciento”, puntualizó Alandia.
